Red Velvet Cupcakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp unsweetened cocoa powder
- 1 cup vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tsp vanilla extract
- 1-2 tsp red food coloring adjust for desired color
- 1 tsp white vinegar
- 1 tsp instant coffee powder optional
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cocoa powder
In a separate bowl, combine the vegetable oil, buttermilk, eggs, vanilla extract, red food coloring, white vinegar, and instant coffee powder if using
Mix well
Slowly add the wet ingredients to the dry ingredients, mixing until the batter is smooth and well combined
Divide the batter evenly among the cupcake liners, filling each about 2/3 full
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely
Once the cupcakes are cool, you can frost them with your favorite cream cheese frosting or icing of your choice
Decorate with sprinkles, if desired
