Keto Chicken Cobb Salad
This Keto Chicken Cobb Salad is a tasty and filling one-person meal that is low in carbs. It's great for a quick lunch or dinner because it's full of protein, healthy fats, and fiber.
Ingredients:
- 1 cup cooked chicken breast, diced
- 2 cups mixed salad greens
- 2 slices cooked bacon, crumbled
- 1/4 cup cherry tomatoes, halved
- 1/4 cup diced cucumber
- 2 tablespoons crumbled blue cheese
- 2 tablespoons diced avocado
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
Instructions:
Cooked chicken breast, mixed salad greens, crumbled bacon, cherry tomatoes, diced cucumber, blue cheese, and diced avocado should all be put in a large bowl together
