Vegan Lemon Poppy Seed Donuts
These vegan lemon poppy seed donuts are a tasty treat that tastes great with citrus fruits and have a light crunch from the poppy seeds. You can eat them for breakfast or as a sweet snack.
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- Zest of 1 lemon
- 2 tbsp lemon juice
- 1/2 cup non-dairy milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 tbsp poppy seeds
Instructions:
Warm the oven up to 350F 175C and grease a donut pan
Mix the flour, sugar, baking powder, baking soda, salt, and lemon zest together in a bowl
Mix lemon juice, non-dairy milk, vegetable oil, and vanilla extract in a different bowl using a whisk
Add the wet ingredients to the dry ones and mix them together until they are just mixed
You can now add the poppy seeds
Fill up each donut hole about two thirds of the way to the top with batter after the pan is ready
Bake the donuts for 10 to 12 minutes, or until a toothpick stuck in one comes out clean
The donuts should cool in the pan for a few minutes before being moved to a wire rack to cool all the way down
