Grilled Thai Spice Chicken Sliders with Sriracha Mayo



The Grilled Thai Spice Chicken Sliders with Sriracha Mayo are very tasty and a great way to add a spicy twist to regular sliders. The Thai-style chicken patties are seasoned with ginger, red curry paste, and other spices. The Sriracha mayo gives them a spicy and creamy kick. When you serve these sliders at your next BBQ or game day party, they'll go fast!

Ingredients:

  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1 tbsp Thai red curry paste
  • 1 tsp ginger, grated
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • Salt and pepper to taste
  • Slider buns
  • Lettuce leaves
  • Sliced cucumber
  • Sriracha Mayo:
  • 1/2 cup mayonnaise
  • 1 tbsp Sriracha sauce
  • 1 tsp lime juice
  • 1 tsp honey
  • Salt to taste

Instructions:

In a mixing bowl, combine ground chicken, minced garlic, Thai red curry paste, grated ginger, cumin, coriander, salt, and pepper

Mix until well combined

Divide the chicken mixture into small patties, roughly the size of your slider buns

Preheat your grill to medium-high heat and oil the grates to prevent sticking

Grill the chicken patties for about 4-5 minutes per side, or until they are cooked through and have nice grill marks

Make sure the internal temperature reaches 165F 74C

While the chicken is grilling, prepare the Sriracha Mayo by mixing mayonnaise, Sriracha sauce, lime juice, honey, and a pinch of salt in a small bowl

Stir until smooth

Toast the slider buns on the grill for a minute or two until they are lightly browned

Assemble your sliders by spreading a generous amount of Sriracha Mayo on the bottom bun, then add a lettuce leaf, a grilled chicken patty, and a few slices of cucumber

Top with the other half of the bun and secure with a toothpick
