Instant Pot Carnitas
These Instant Pot Carnitas are a perfect Paleo, Whole30, and Keto-friendly meal option that's full of flavor and easy to make. The Instant Pot makes the pork incredibly tender, and the citrus juices add a zesty kick.
Ingredients:
- 4 pounds pork shoulder, cut into chunks
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup orange juice
- 1/4 cup lime juice
- 1/4 cup chicken broth
- 2 bay leaves
Instructions:
In the Instant Pot, combine the pork, onion, garlic, cumin, oregano, paprika, chili powder, salt, and black pepper
Pour in the orange juice, lime juice, and chicken broth
Add the bay leaves
Lock the Instant Pot lid and set the valve to 'sealing
' Cook on high pressure for 40 minutes
Allow for natural pressure release for 10 minutes, then manually release any remaining pressure
Using a slotted spoon, remove the pork from the Instant Pot and shred it with two forks
Optional: Preheat your broiler and place the shredded pork on a baking sheet
Broil for a few minutes until the edges are crispy
Serve the carnitas in lettuce wraps or on a plate with your favorite Paleo and Keto-friendly toppings
