Quinoa Banana Chocolate Chip Cookies



Cookies made with cooked quinoa, ripe bananas, and dairy-free chocolate chips that are gluten-free, dairy-free, egg-free, and vegan.

Ingredients:

  • 1 cup cooked quinoa, cooled
  • 2 ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free oat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dairy-free chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a large bowl, combine the mashed bananas, melted coconut oil, maple syrup, and vanilla extract

Add the cooked quinoa to the wet ingredients and mix well

In a separate bowl, whisk together the oat flour, baking soda, cinnamon, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until a cookie dough forms

Fold in the dairy-free chocolate chips

Using a spoon or cookie scoop, drop spoonfuls of cookie dough onto the prepared baking sheet, flattening them slightly with the back of the spoon

Bake in the preheated oven for 12-15 minutes, or until the cookies are golden around the edges

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
