Carrot Harissa Salad



This Carrot Harissa Salad is colorful, good for you, and full of flavor and nutrients. The kale, carrots, pomegranate, and red pepper make for a great mix of tastes and textures, and the vegan harissa dressing gives it a spicy kick. Great for a quick and healthy meal!

Ingredients:

  • 2 cups kale, chopped
  • 2 cups carrots, grated
  • 1/2 cup pomegranate seeds
  • 1 red pepper, thinly sliced
  • 2 cups spinach
  • Vegan harissa dressing store-bought or homemade

Instructions:

Clean the spinach and kale and cut them up

Put them in a big bowl for salad

Remove the carrot skins and put them in the bowl

Cut the red pepper into thin slices and add them to the salad
